You may have to return the cabbage to the boiling water occasionally to "wilt" the inside leaves.
3.Combine ingredients for filling.
4.Place some of this mixture (about 1 1/2 tbsps) on each cabbage leaf & fold "envelope" fashion. I find it easier to do this if you make a V shaped incision & remove a part of the coarser spine.
5.Lay flap side down in a heavy Dutch oven.
6.Combine sauce ingredients (add 1 cup of chicken broth to lessen the tomato flavour if you prefer)and pour over cabbage rolls.
7.Bake at 350 degrees F for about an hour. Serve with a dollop of sour cream.
This cabbage rolls are ready to serve.... great taste ! Enjoy it !
slovak-stuffed-cabbage

Slovak Stuffed Cabbage

Slovak Stuffed Cabbage

Cabbage Rolls Recipe Ingredients:

1 pound ground beef

1 pound ground pork

1 onion, chopped

1 teaspoon salt

black pepper to taste

1 teaspoon chopped fresh parsley

1/2 cup cooked brown rice

1 1/4 teaspoons garlic salt

2 (10.75 ounce) cans condensed tomato soup

27 ounces sauerkraut, drained

1 (29 ounce) can diced tomatoes

1 medium head cabbage

5 slices bacon

2 tablespoons white sugar

3 cups water

Cabbage Rolls Instructions

Preheat oven to 350 degrees F (175 degrees C). If needed, soak in cold water 10-20 minutes to reduce sourness. Squeeze dry and set aside. In a large saucepan, bring to a boil enough salted water to cover the cabbage. Add the cabbage, turn the heat to low and simmer 8 minutes. Remove the cabbage and let it drain while it cools enough to handle. Pull off 16 large unbroken leaves and lay them on paper towels to drain and cool further.

2 In a 10-inch skillet, saute the onions and garlic in olive oil, until the onions are lightly colored. In a large mixing bowl, combine the pork, rice, eggs, paprika, marjoram, the onion-garlic mixture, salt and a few grindings of black pepper. Mix well with a fork or wooden spoon.

3 Place 2 tablespoons of the stuffing in the center of one of the wilted cabbage leaves and, beginning with the thick end of the leaf, fold over the sides, then roll the whole leaf tightly, as you would a small bundle. Repeat with more leaves until all the stuffing has been used.stuffed-cabbage-cooking.jpg 4 Spread the sauerkraut on the bottom of a 5-quart casserole and arrange the cabbage rolls on top of it. Add the water mixed with the tomato puree. Bring
the liquid to a boil, then cover the pan tightly and cook the stuffed cabbage over low heat for 1 hour. Transfer the rolls from the casserole to a warm plate. Stir in the sour cream to the sauerkraut. Simmer another 5 minutes. Lift the sauerkraut onto a serving platter with a slotted spoon. OR sour prepared leaves

1 tablespoon paprika powder, sweet

1 1/2 teaspoons paprika powder, hot

3 1/3 pounds sauerkraut

1/2 cup onion minced/grated OR sub. 2 whole bulbs garlic

4 bay leaves whole

1 handfull peppercorns, black, whole (optional)

water to cover (see instructions!)

3 paprika peppers (or more, as required)

***For the Sauce***

1 tablespoon paprika powder, sweet

1 cup fat melted goose (best!) or pig fat

1/2 cup flour

1 cup sour cream

Cabbage Rolls Recipe Instructions

Combine all stuffing ingredients (flesh, spices, rice) except cabbage. Mix well by hand. Add the optional egg if dry or if desired. Can be tasted to check for sharpness of paprika flavour. (If using fresh cabbage, add 1 teaspoon salt to stuffing mix).

Either buy sauerkrauted cabbage leaves packed individially in packages or remove core from large cabbage, add some salt and lots of water to a large pot and boil the cabbage until the leaves are tender. Strip cooked leaves from cabbage. They should be soft and flexible. If the stem is still tough, it can be cut out.

Place portions (around 1/2 cup) in individual cabbage leaves and roll, tucking in the sides as you go.

Do not rinse sauerkraut. Line bottom of large pot (at least 3 gallon size) with bacon. Place on stove for a few minutes until fat is removed from the flesh. Remove from heat. (this is an optional step) Add one-half the sauerkraut, and all the onion/garlic. Place stuffed rolls in pan stacking them around and on top of each other until all used. Add the rest of the sauerkraut on top of stacked rolls. Add enough water to cover rolls. This can be plain water, or water that a smoked ham or other smoked meat has been cooked in.

Sprinkle on the top the peppercorns, whole peppers and bay leaves. Cover and put on low heat for at least 3 to 4 hours cooking. Do not stir. Watch carefully so it does not cook too fast.

When the cabbage rolls are tender, remove the large whole paprikas and bay leaves. (peppercorns can remain) Remove the rolls from the kraut and set aside.

In the pan where you melted the pig/goose fat, add flour and cook stirring constantly until mixture has turned a light brown colour. When colour is OK, add paprika powder and then add this mixture to the kraut mixture in the empty pot. Stir thoroughly and then re-add the kraut rolls. Find a large, heavy, carving fork (2 prongs) and put it through the center of the cabbage.
Fill a very large stockpot with salted water and bring to a boil. Place the cabbage into the boiling water, leaving the fork extending. Simmer for a few minutes and remove as the outer leaves begin to turn a bright green.

The object is to cook the cabbage for as little time as possible, but long enough to tenderize the outer leaves. Remove from the water and allow to cool on a dish until the outer leaves are still hot but are cool enough to handle.

Remove as many outer leaves as you can by cutting them off at the bottom, one at a time, with a sharp paring knife. Continue to remove leaves until you reach leaves that are not flexible. Return this uncooked portion of the inner cabbage to the boiling water pot and continue as before until all the leaves are steamed and removed and prepared for the filling.

NOTE: As you remove cabbage leaves, some will tear and otherwise not be suitable for using as a wrapper. Do not discard these, as they can be used to line the pot, or you can shred them to add to the filling mixture.

At the bottom of each leaf there will be a thick stem; sliver a slice off this to thin it out (some people cut a V-notch here). The purpose is to make the base flexible so that you can roll it up.

Stuff each leaf with the filling mixture. Starting at the bottom of the leaf, roll up one turn, then turn in the sides of the leaf to cover the filling, then roll up some more until you reach the top of the leaf and have a little bundle.

Sprinkle with salt and dredge in flour. Brown in fat in a skillet (This is an optional step if you have the time).

You can now re-use the pan used to cook the cabbage rolls on your stove top or you may cook these in your slow cooker.

Layer the bottom of the Crockpot or pan with broken cabbage leaves (the ones that weren't complete or too small to use for rolling). Stack the filled cabbage leaf bundles on top of the bed of leaves, a single layer at a time. Top each layer with a few spoons of sauce or tomato soup, and repeat with another layer of leaves, another layer of cabbage rolls, etc.

Stack the bundles in their layers carefully with the end of each leaf underneath (some people fasten with a toothpick but this is not really required). Finish off the final layer of cabbage rolls with any remaining filling.

Cover and simmer on the lowest heat setting of your stove top for 2-3 hours or in the slow cooker for 4-5 hours.

Alternatively, you can bake these in the oven.

To bake, stack bundles over cabbage leaves in a casserole dish, pour on the tomato sauce or soup, cover with foil, and bake in a slow oven, 300 degrees F., for about 2 hours.

Whichever method you use to cook the cabbage rolls, be sure not to overcook, so test often and remove when the cabbage leaves are tender. If you use tomato sauce rather than tomato soup, add a teaspoon catsup to the mix. The cabbage rolls recipe is ready ...enjoy it !
chicken-salad-with-sweet-sour-cabbage

SLAVIC CABBAGE ROLLS

SLAVIC CABBAGE ROLLS ...another nice cabbage rolls recipes to try...Great one !

INGREDIENTS

Cabbage

salt

water

rice

onion

1 egg

1/2 lb meat (sausage / lamb)

INSTRUCTIONS
Core a large cabbage. Spray large skillet (that has a good cover) with Pam. Brown meat (leave drippings unless too fat). Add onions, bell peppers, etc. and stirring, saute with meat until onions are clear. Add cabbage. Season all very well to taste. Add approximately 2 cups hot water and rice. Finely chop enough remaining cabbage to measure 1/2 cup, and set aside. Coarsely chop enough remaining cabbage to measure 2 cups; arrange in bottom of a 13 x 9-inch baking dish coated with cooking spray. Top with slivered onion.Bring 1 cup water to a boil in a small saucepan. Add rice; reduce heat to medium-low, and cook 8 minutes. Drain well.

Preheat oven to 350°.Combine 1/2 cup finely chopped cabbage, rice, apple, and the next 7 ingredients (apple through egg). Crumble turkey over mixture; stir just until blended. Place about 1/2 cup turkey mixture in center of each cabbage leaf. Fold in edges of leaves, and roll up; place cabbage rolls on top of coarsely chopped cabbage. Cut several 1/4-inch-deep slits across top of each roll. Pour 1/4 cup water over rolls. Cover with foil, and bake at 350° for
30 minutes.

To prepare basting glaze, cook the bacon in a small saucepan over medium heat for 3 minutes or until lightly browned. Remove from heat. Remove bacon from pan; discard bacon drippings. Return bacon to pan; stir in corn syrup and remaining ingredients. Uncover cabbage rolls; spoon one-third basting glaze over cabbage rolls. Bake, uncovered, 1 hour, basting with basting glaze every 20 minutes. Spoon about 1/4 cup remaining cabbage on each of 8
plates; top each with 1 cabbage roll.
